St Croix Lambs are hair sheep that are bred for meat and not wool. They shed their hair in the spring and don’t require shearing. Their lack of wool results in an animal that has less lanolin, a waxy fat that is responsible for the strong flavor in other breeds of sheep.

COOKING TIPS!!! Grass-fed lamb is very lean. Cook on lower temperature for a shorter duration than a commercial breed. A little moisture can also help (butter, olive oil, etc.) A cut can always be brought back for more cooking, but overcooking cannot be reversed.
